The Eight Different
Tastes
1. Sour - vinegar
2. Salty - sea water and sea foods, celery
and some other root vegetables.
3. Bitter - cumin, bitter almonds, lemon
rind, pomegranates, limes, bitter gourds, neem leaves, tonic water, turmeric,
fenugreek and all greens (dried and fresh).
4. Hot - all chillies.

Pungent - horseradish, mustard, ginger, garlic, mustard leaves and onions.
6. Putrid - cheeses, partridges, chinese eggs, fermented foods like
yoghurt, miso lassi, sauerkraut and tofu.
7. Astringent - raw broccoli,
lentils, beans, peas and foods rich in protein such as avocado.
8. Sweet -
sugar, molasses, maple syrup and cold-pressed honeys.
